Banana Sweet Potato Casserole

This is a recipe where you really don't have to measure, can just eyeball it and throw in as much or as little of each thing as you like - a perfect recipe for the frazzled chef! I use the following amounts to serve 4, but recipe can be doubled to serve 8.

2 or 3 large sweet potatoes
2 bananas, sliced
1/8 cup margarine
1/4 cup brown sugar
1/4 cup orange juice OR pineapple juice OR sherry

Microwave sweet potatoes until mostly done. Peel and slice either into cubes or circular 1/4 inch slices. Layer in casserole dish as follows - sweet potatoes, dabs of butter randomly scattered, bananas, brown sugar. Pour juice of choice over and bake 30 min at 350
